What is actually in your za'atar?

Wild Palestinian thyme, toasted sesame, sumac and salt. Five ingredients, nothing else. No flour, no wheat bran, no citric acid, and nothing added to pad the weight of the bag.

Why is it green rather than brown?

Because the thyme is hand-picked and blended in season rather than stored for a year first. Brown za'atar usually means old thyme, or a blend bulked out with something cheaper.

How long does a blend stay fresh?

Twelve to eighteen months sealed. Once opened, aroma is at its best for around six months — keep it airtight and away from the heat of the stove, not in a jar beside it.

Are the recipe mixes already salted?

The maqluba, mansaf and shawarma mixes are seasoning bases with no added salt, so you salt the dish to your own taste. Only the za'atar blend contains salt.

Do you sell in bulk or to retailers?

Yes — za'atar and sumac come in 5kg bags for bakeries and restaurants, and there is a separate wholesale and retailer programme with its own pricing.
